South-Indian and Chinese fusion :CHIDLI

Kids love the Chinese flavor, but some times it is become not so healthy item due to white flour or maida and deep frying. So here is the tasty, healthy and great fusion for Chinese and south Indian, which taste and smells like Chinese, However, have less oil and healthy with great taste of South Indian i.e. Chinese idli known as Chidli . South Indian Chinese - a great fusion


Makes approx. 20 idlis.

Ingredients for IDLI:

Sooji (Cream of Wheat/Semolina) – 2 cups
Mustard Seeds – 1 tsp
Yogurt – 1 cup, well beaten
Curry Leaves – 1 sprig
Salt – 1 tsp (to taste)
Water – 1 cup
ENO Fruit Salt – 2 tsp


For Dressing :

1 small Cabbage finely chopped
1 capsicum finely chopped
1 big onion thin sliced
1 small carrot grated
All other vegetables like beans etc , as per the taste
1 spoon soya sauce
1 spoon vinegar
2 big spoon tomato ketchup
salt
black pepper
1 tbs oil


Method :

Take a Big container , mix sooji and curd and beat it till no lumps formed, Even if it is thick, leave it aside for 1/2 hr. ( for the working ladies: If you are planning to make it next day, you can mix the batter and leave it overnight as well. Just in summers keep in Fridge and in winters it could be kept outside).
After half hour, add water, salt, mustard seeds and curry leaves , to make a paste of medium consistency.
Mean while grease the idli container. now add the eno salt to it and mix it well in one direction, the mixture should foam up. and set the batter into the idli container instantly.

For Gas : Put the Idli Stand into the steamer. Place a tight lid on the steamer and steam Idlis for exactly 20 minutes on medium heat.


For microwave : It will take 3 mins, you can check by inserting the knife in middle of it. if knife is clean then they are done , other wise set of 30 sec more.
Remove Idlis from the trays by scooping them out with a spoon.
Let the idli be cool down little. They can be eaten as it is, with some chutney or sambhar as well.


Preparing the dressing :

On the medium flame put the pan or kadhai and heat up the oil. Once the pan is properly heated, put the cabbage in it and fry on medium and low flame till they become tender. Now add capsicum and fry them and then add all other vegetables and fry them, add pinch of salt as it increase the process of tendering for all vegetables. and Fry then till all vegetables arr slightly brown and tender.
Add black pepper, vinegar, soya sauce and Tomato ketchup. quantities of sauce can be differed as per the taste and consistency should be like gravy which can be mixed in idlis.
 

If Idlis are big, cut it into halves, other wise put all the idlis as they are in the kadhai in the sauce prepared. Toss the idli such that they don't get break. Cover then on low flame and keep for 3 mins.
Close the Flame and leave it for 2 mins.

Idli's are done and they could be server hot with soup or ketchup.
This is really a great recipe for lunch for kids , with less oil and great taste.
